Loved the video. Why did you remove the rings? How long do the eggs last after you break the seal?
Removing the rings is just a regular canning safety practice so you can check for seals easily in storage. They should last for months in the fridge even after being opened.

This is probably a naive question; once you cut pieces off to cook, do you need to salt the cut edge and hang it back up to keep, or has it already cured enough without needing to salt the edge?
Not at all, questions are how we learn, and you never learn if you don't ask! You do not need to do anything after you start to cut off pieces for use, just hang it back up. Do use a clean and dry cutting board and knife to keep your cure from being introduced to moisture and bacteria from other food prep but otherwise, nothing special!

Watching this instead of political videos because I know at least this knowledge matters.
I used to use a method very similar when I first started! This works very well. I started doing my own lab work and advanced cultivation a few years ago because I'm a science nerd. Lol this is a great way to start, after a few years if ur curious, you will be creating ur own mushroom strains using spores and agar. This is the most rewarding hobby that feeds u at the same time. Great video!

Sea salt is not pure salt (sodium chloride), nor are any other the other salts mentioned. Quoting Wikipedia on sea salt's impurities, "calcium, potassium, and magnesium salts of chloride and sulfate with substantially lesser amounts of many trace elements found in natural seawater." PINK salt is not pure either, salt is white, or clear. I can't imagine the objection to iodized salt, but common table salt or rock salt are definitely closer to purity than those others. The ancient Egyptians and Romans did not have digital scales, but neither did they have pure salt. I kinda doubt they'd understand the attraction of boutique salts any more than I do.

After some much needed further research, it’s confirmed that Listeria is not a disease which compels oneself to create lists.
FOR anyone worried about using/ingesting alcohol, just put the desired number of drops of the tincture into a small glass of water, wait a few minutes and then drink, the alcohol evaporates and you are left with medicinal water 🙂
With the Hops, for tea use 1 hop and seep for no more that 3 min otherwise it is too bitter (nasty) tasting, sweeten with stevia or honey and drink 1 cup 20-30 min before bed. This sweet herb is so good and gentle. It will help you fall asleep fast and stay asleep all night, BUT if you do have to get up with a child or use the restroom, you can and you wont feel drugged, but you will fall right back to sleep and wake up feeling refreshed. I have used Hops to help tons of people break their addiction to OTC sleep aids and their insomnia.

@Italiano-Forte No, I usually only cure in the fall and winter when it's cold enough to get started without, but the fridge is an option if folks want. You need temps around 40-55 f to get started. Yes, total immersion in salt is another great variation in salt curing!
Doesn’t it loose a lot of good stuf like vitamins and fibres or proteine or such when all the moisture gets out of it?
Not really, not in the first year or two at least. Eventually you'll start to lose micronutrients but there will still be nutritional value. It isn't due to moisture loss that it would break down nutrients. (take freeze drying as a prime example there) hope that helps!

I am 63. I use raw ingredients and cook. I cure my own bacon, bake all my own breads, make my own yogurt, etc, etc, etc. No seed oils and no processed foods. My health? Tip top in every category. Prescription or OTC drugs? None!

Whole eggs will make your ice cream more watery. The yolks are where it's at for this recipe!

I dry cured a lozino and copa. Both weighted about 2 lbs. 51 degrees and 73 humidity pretty consistent. They dried in 5 weeks . 35% weight loss. 5 weeks seems fast think something went wrong? No mold at all.
5 weeks doesn't seem crazy fast for that to me. 73% humidity is on the lower end but not bad. If you didn't have case hardening (where the outside dried too fast and the inside is still raw and didn't lose the moisture) id say it went just fine! If you want to slow down the drying in the future, you could try wrapping when you hang, something like in this video ua-cam.com/video/b7uLGDS8QS0/v-deo.html or also you can make a paste out of equal parts rendered fat and rice flour and use that all over the outside of the cure to slow drying.
Rendered fat and rice flour mix non cooked correct just mixed ??? I already use collagen sheets from the sausage maker. 🤷🏼♂️.

Can't do (cow)dairy, so i just freeze ripe bananas,blend them with some pure vanilla and non-dairy milk or goats milk, hits the spot every time.

Thank you. Love pickled eggs. I made couple batches last week; one with pickling spice and white onion and the other with garlic and jalapeños. I then went back to store and bought 8 fresh jalapeños and pickled them. We have 25 chickens and getting a lot of eggs. Did not know about canning them; just been refrigerator pickle. Going to try hot bath as you showed.

You mentioned Azure Market salt, but when I look, the bulk salt seems to have magnesium carbonate in it. Is this acceptable for meat preservation?
Azure carries a lot of salt, some does have additives, you want one without. Check the links in this video description for a couple that don't have any if you want or look around a little :)
